Slow Cooker Caramelized Onions:
Sweet, Dark & Memorable!

So memorable, these onions, just thin slices of onion cooked until soft and dark and sweet in the slow cooker. My recipe for Caramelized Onions is "extra special" thanks to tiny touches of brown sugar and dry sherry. And now? My recipe is "extra easy" by switching from cooking the onions on the stove to cooking them either in a slow cooker or "slow cooking in the oven". Real Food. Vegetarian, Easily Switched to Vegan. Low Cal. Low Carb. Weight Watchers Friendly. Gluten Free. Great for Meal Prep.

Should Cooked Pork Be Pink? Yes and No.

So here's the question. Should pork still be "pink" after it's cooked? Am I straddling the fence by answering sometimes "yes" and sometimes "no"? My reasoning just might surprise you ... and I'd love to know yours, too. Please do chime in ...

Wedge Salad with Homemade Low-Cal, Low-Carb Blue Cheese Salad Dressing

Happy Salad Days , All! Welcome to my salad version of that famous hot-weather favorite, the BLT Sandwich. A good BLT is such a late-summer indulgence of good bread, bacon and tomato. But really, isn't a Wedge Salad really a BLT without all the bread? Right?! For my salad version, start off with a much lighter but completely rich Homemade Blue Cheese Dressing where it "pays" to pay attention to texture. Drizzle the dressing over a wedge of iceberg lettuce, a juicy tomato, crispy bacon plus a few bread crumbs cooked in bacon grease. Then, y'know, just call it “dinner”! Tonight, maybe?! Summer Couscous with Mango & Tomato

Quick-cook couscous all dressed up for summer, quick to toss together and studded with bites of fresh mango and perfectly ripe summer tomatoes.
