So why is it that eggs are in short supply with rising prices and chicken itself seems to be a stable supply with flat if not slighter lower prices?
We all know that the cause of egg shortages is the bird flu but I must admit, after that, this was all news to me:
- ... egg-laying hens are raised to (duh) lay eggs where "broiler" chickens are raised for meat, there's little to no crossover
- ... egg-producing facilities may house a million chickens, a broiler facility maybe 10,000 so the flu impact, one hit, is huge for egg-layers, less with broilers where risk is more diversified
- ... even more, it just takes longer for egg facilities to recover because it takes a hen nine months to mature enough to lay eggs where broilers are born and butchered in a mere 30-60 days
- ... there's a human factor too, that demand for eggs is less price-sensitive than demand for other foods, we still want to buy eggs, even at higher cost
So. Let's cook some chicken, shall we?!

Democracy Matters
The country needs calm, thoughtful and assertive voices amid the chaos inflicted by a minority hellbent on taking/retaining generational power by strangling democratic principles and equal rights. None of us have to personally change the world. We just have to do our part. Pick one thing for the top of your To Do List this week.
I wish I could find the source but a few words from this week haunt me.
"The urgency for citizens to act is NOW. Because a year from now, all this will be normalized."
Yep. We're the frogs in the big ol' bucket of swamp water and Trump and his crony Republicans are stoking the fire below.
So please, please. Act now. Do all you can. Don't wait for an invitation or a friend. Use the app 5Calls or the topics / scripts provided almost daily via Chop Wood Carry Water. Show up at protests on Presidents Day, tomorrow. Boycott all except very local businesses on February 28th.

The Best No-Recipe Recipe I Made This Week
Leftovers + Roasted Salmon & Broccoli + Meal Prep Salad Dressing = a Wonderful "Bowl"
Leftover Cauliflower Cream warmed in the microwave, topped with a piece of salmon brushed with sesame oil, surrounded with broccoli roasted with a little more sesame oil, drizzled with some My Everyday Creamy Herb Salad Dressing.
Honestly? This is how dinner comes together in my kitchen most nights ... cooking one/maybe two things, then just picking and choosing from what's on hand and needs using up. It's my personal trick: cooking often to cook less, rarely cooking an entire meal in the same stint.
Trader Joe's Test Kitchen
This week we tried the Chicken Gyoza Potstickers and found them ... meh ... especially compared to the Thai Gyoza right next to them in the freezer section. We love-love the Thai ones, a bargain at $.80 more. Both cook in the skillet in under 10 minutes, I usually serve with roasted vegetables and a salad so we don't eat the whole dang package! (Which, honestly, would be the worst binge in the world.)
A Quick Peek Into a Real-Life Kitchen
Just so you know, everything's not all pretty pictures around here, in the background is a pile of dirty dishes. And just like many (all?) of us, come five o'clock, I too draw a blank about what to make for supper, despite so many recipes I so dearly love. Here's a quick peek from this week.
- THIS WEEK With an abundance of avocados (on sale after the Super Bowl) and oranges (tis February, after all ... ), I made this salad 3x!. Twice I skipped the Lime Vinaigrette and instead used a very dill-bright version of My Everyday Creamy Herb Salad Dressing. Man. So good.
- THE RECIPE Orange & Avocado Salad Simple but sumptuous. (PIN This)
- FOR VALENTINES AT HOME I was pretty proud of myself for cooking the whole meal without a grocery store run, including two dishes that don't get made often enough which paired really well not only with steaks cooked using the reverse-sear method (I think I like it!) but also with one another. They're special but not over the top. They're unusual but not weird. I definitely recommend this combo for a special-occasion meal at home.

Something to Read
I've been on a Colm Tóibín tear of late, loving Brooklyn and then Long Island, though snoozing through about half of Nora Webster before giving up.
These are intriguing looks into the lives of immigrants, those who leave, those who're left behind from the mid 1950s into the mid 1970s, so within the lifetimes of most of us here reading, I suspect.
One thing I just don't get (perhaps because I read Book #2 before #1) is how Tony moved from a young patient loving suitor to a middle-aged controlling philandering cad. What happened to him?
