How Easy Is This?!

Just a big handful of blueberries plus the usual suspects for a vinaigrette, olive oil and vinegar and tiny bits of garlic and onion that keep this fruity salad dressing in the savory side.

It tastes so fruity fresh – chalk up another successful entry in the continuing quest to never buy salad dressing again.

And then? Make a salad! The mix of blueberries and blue cheese and blue peaches – oh wait, tee hee, that would be just peaches, perfectly ripe – is magnificent.





Recipe Overview: Easy Blueberry Vinaigrette

  • Easy Blueberry Vinaigrette is a small batch of a simple fruity vinaigrette, savory not sweet, a salad dressing that adds lively freshness to salad greens topped with fresh fruit and sprinkled with a creamy cheese, something earthy like blue cheese or tangy like feta or intense like goat cheese.
  • When to Serve = During the height of summer when blueberries are so sweet and plump.
  • Vegan (the Vinaigrette itself) + Gluten Free + Dairy Free + Egg Free
  • Distinctive Ingredients = Blueberries + Garlic + Onion + Vinegar

EASY BLUEBERRY VINAIGRETTE

Hands-on time: 10 minutes
Time-to-table: 10 minutes
Makes 1/2 cup, easily halved or doubled
    VINAIGRETTE
  • 1 small clove garlic, chopped
  • 1 teaspoon onion
  • 1/2 teaspoon sugar (or honey)
  • Tiny pinch good salt
  • 2 tablespoons good vinegar (see ALANNA's TIPS)
  • 2 tablespoons fruit juice, any flavor (see TIPS)
  • 2 tablespoons good olive oil (ditto)
  • 1/2 cup fresh blueberries
    SUGGESTION: A MARVELOUS SALAD
  • Lettuce greens
  • Fresh blueberries
  • Fresh peach slices
  • Blue cheese, goat cheese or feta crumbles
  • Toasted nuts
  • Easy Blueberry Vinaigrette

MAKE THE VINAIGRETTE In a mini food processor, whiz the garlic, onion, sugar and salt on their own, first. Then add the vinegar, fruit juice and olive oil and whiz again. If you're making ahead of time, stop here. Just before serving, add the blueberries and process until smooth. Taste a bit and adjust the sugar (or honey), salt and oil to personal taste.

ONE MARVELOUS SALAD Serve with lettuce greens topped fresh blueberries, ripe peach slices, cheese crumbles and toasted nuts, drizzling the Vinaigrette over the top. So good!

TIMING TIP After resting a few minutes, the blueberries' pectin (fyi, pectin is a soluble plant fiber known for thickening) causes the Vinaigrette to become quite viscous, almost jelly-like. The first time I made it many years ago, I started with just two tablespoons of olive oil but in order to pour it, was forced to add more oil than was needed for (my) taste. Ever since, to limit calories and fat grams, I use 2 tablespoons oil and 2 tablespoons fruit juice, that's just perfect!

EXTRA-EASY BLUEBERRY VINAIGRETTE Combine your favorite salad dressing with blueberries, just mush them together in a mini food processor. I recently tried Hendrickson's (the Original Sweet Vinegar & Olive Oil) with blueberries and ooo-la-la, it was lovely. Then I tried adding blueberries to some Brianna's Poppy Seed, perfect!


OTHER FRUITS? It's peach season here in Missouri, I think ripe peaches would work so well, no changes needed. Mangos? Pineapple? Apricot? Cherries? What appeals to your taste buds? And hmm, what do you think about this? Tomatoes are actually fruit so maybe, yes, tomato?

ALANNA's TIPS The terms "good" vinegar and "good" olive oil are subjective, of course. Good news, by "good" I don't mean some some pricey vinegar or some expensive olive oil. For me, "good vinegar" means anything except harsh white vinegar and "good olive oil" means something with a flavor you like. My everyday choices include rice vinegar, white wine vinegar and red wine vinegar. Balsamic vinegar is especially good with blueberries! But if you collect vinegars, try a sherry vinegar or a fig vinegar. FYI for years now, I've been a fan of the oils and vinegars from O Olive Oil. I see bottles on the shelves at my grocery store and some times at HomeGoods, TJMaxx and the like but sign up for the small company's occasional marketing email and you'll get notices of deep-discount sales: that's my cue to stock up! (Sponsored? Nope! Though way back in 2007, O gifted me a whole case of their shapely bottles and when I made a vinaigrette, my then fifteen-year old nephew called it "good enough to drink"! Wanna know more? Please see Zucchini Carpaccio.) No fruit juice? Lemon juice and lime juice are probably too acidic so avoid these unless you're ready to really increase the sugar or honey to offset. A fruity lemonade? Sure. A fruity soda? Fun! (And it's just two tablespoons, right?) Pineapple or apple? Of course. Get creative! But if you strike out in the juice department, no stress, just use a little water. The inspiring recipe suggests straining out the blueberry seeds after processing but I don't find that necessary. Perhaps it's important with wild blueberries? For aesthetics, I recommend drizzling the dressing over top since tossing the greens in the dressing creates a muddy look.

  4. I had to smile when I saw your post because the last time my sister visited me we enjoyed a salad at a restaurant with blueberry salad dressing. When she went home she bugged me to call the restaurant to get their recipe. I called and emailed and got nothing... I am forwarding this great salad dressing to her. Thank you! 8/22/2008

  7. This looks quite delicious! I was searching for a recipe for something similar not long ago. I wanted a fruity dressing to sprinkle edible flower petals over. What I came up with was a bit too sweet. I didn't think to add garlic and onion for balance. I think your recipe will be perfect. 9/2/2008

    I see this is a old post but just wanted to say I was so happy to find this recipe.
    I made it tonight and its amazing! Ever since a restaurant I frequent started serving blueberry vinaigrette as their house dressing I've wanted to have some at home and was never able to find any.
    I happened to goto the restaurant tonight for a girls night only to find they switched chefs and changed the dressing!
    So I came home and made this one for my husbands dinner and it's such a close match to the one I love and miss so Thanks so much for posting!! :) 2/4/2012
