Seasonal Sundays: Red, White & Blue! (Week 27)

Stock up on sparklers because this week's "Seasonal Seven" just might inspire one or two or three red, white (and blue!) celebrations during the most summery week of the year. Happy Canada Day! Happy Fourth of July! With these recipes, color is key, but I've definitely not forgotten "easy" and "delicious". You can make these now, really!

Easy-Easy Hummus Salad

For anyone who's wondered if it's possible to pull dinner from a can of chickpeas, I'm here to promise: definitely! This might be the easiest, most satisfying vegetarian meal in my recipe collection. First, make a homemade hummus that's loose, spoonable and almost creamy, then top it with fresh Greek-salad style vegetables (you know, juicy tomatoes, crisp cucumbers, colorful peppers) and some tangy feta crumbles. Pile on some toast or some pita and opa ! Dinner! (In just 20 minutes!) Whole Food, Fresh & Inventive, Fast & Flexible. Pretty on the Plate, Mere Minutes to the Table. I've got you covered, breakfast, lunch and dinner and even a couple of sweet endings. Will you need to turn on the oven? Heavens no. (What am I, crazy?) You may not even need to cook to stay feeling cool and refreshed. Lean in, all, it looks like it's gonna be one Long Hot Summer.

No-Ordinary Green Beans for Summer (Week 24)

Add a few pounds of pretty summer green beans to your grocery list, people, because this week's "Seasonal Seven" recipe collection is gonna pull at those green bean heartstrings. Suppers? Check. Salads? Of course. Sides. Naturally! Is it too strong to promise a garden's worth of keepers here? Nope!

Light & Lemony Crab Salad

Pick up some inexpensive imitation crab meat, turn it into a light, summery meat "salad" that's a kissin' cousin to chicken salad. Tuck it into a soft sandwich roll, scoop it over a lettuce plate, spread a little across crackers. This is a summer staple, easy to make, easy to use, handy to have on hand for a summery lunch or supper, even a breakfast omelet. Home-style Whole Food, Simply Prepared, "Plain" But Perfect.
